Thompson Heritage Ranch ‘24
In 2024 we met with our good friend and San Diego Rancher, Ty Thompson of Thompson Heritage Ranch, to discuss doing a dinner at his property. We settled on utilizing a whole hog, but not in the traditional way, butterflyed open and on a smoker. Instead, we parted it out into 6 sub primal cuts across 6 different course. Each cut was cooked in a manner that would highlight its specific qualities.
